SHRIMP TARRAGON 
1 1/2 lbs. shrimp, peeled & deveined
1 tbsp. butter
1/2 med. white onion, chopped
1 lg. clove garlic, minced
1 tsp. tarragon flakes
1/2 tsp. white pepper
1/2 tsp. salt
2 lg. ripe tomatoes, peeled & chopped (seeded, opt.)
1 c. heavy cream
1 pkg. fettuccine
1 (8 oz.) can tomato sauce

In a large skillet, melt butter and saute onion and garlic until tender. Add tarragon, pepper and salt. Add chopped tomatoes and simmer for 15 minutes or until tomatoes are very soft. Add can of tomato sauce. On low heat, gradually stir in cream until blended. Simmer for 10 minutes. Add shrimp and simmer for 6 minutes. Serve over hot fettuccine (green spinach type looks nice). Makes 4 to 6 servings.
