SALMON CASSEROLE 
327 calories per serving.

1 (16 oz.) can salmon
1/2 c. frozen fresh peas cooked
4 slices extra-thin bread, toasted and grated
1 beaten egg
2 tbsp. minced onion
2 tbsp. chopped parsley
2 tbsp. lemon juice
1/4 tsp. salt
1/4 tsp. pepper
1/4 c. water

Remove skin and bones from the salmon, but do not drain. Mix salmon and liquid together with the remaining ingredients. Place in a greased casserole. Bake at 350 degrees for 45 to 60 minutes. (If you do not use extra-thin bread, you must increase the calories accordingly.)
