SALMON CASSEROLE | |
1 (16 oz.) can salmon 4 slices bread, toasted and grated 2 tbsp. minced onion 2 tbsp. lemon juice 1/4 tsp. pepper 1/2 c. frozen fresh peas, cooked 1 beaten egg 2 tbsp. chopped parsley 1/4 tsp. salt 1/4 c. water Remove skin and bones from the salmon, but do not drain. Mix salmon and liquid together with the remaining ingredients. Place in a greased casserole. Bake at 350 degrees for 45 minutes to 1 hour. 4 or 5 servings. VARIATION: Shape salmon mixture into a loaf and cover with crescent roll dough before baking. Brush with egg yolk thinned in water. Serves 4 or 5. |
