FRIED PIE DOUGH

1 tsp. salt
1/3 cup shortening or lard
1/3 cup (about) ice water
filling
oil for frying

Put 1 1/2 tablespoons filling on 1/2 of each circle leaving the edge clear. Brush edges with water. Fold empty side over filling to make half circle and crimp edges well with a fork.

Fry in deep hot oil at 360°F til light golden brown, about 2-3 minutes, turn and fry other side. Remove with a slotted spoon to drain on paper towels.

You can use any type of pie filling or cheesecake filling; in a pinch use strawberry or raspberry jam.

May be baked at 375°F for about 30 minutes in preheated oven.
