MICROWAVE PEANUT BRITTLE 
1 1/2 c. raw peanuts, skin on (or cashews)
1 c. sugar
1/2 c. light corn syrup
1/8 tsp. salt
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In 1 1/2 quart microwave proof dish, stir together nuts, sugar, corn syrup, and salt. Microwave on high for 4 minutes. Remove and stir. Microwave on high for 4 more minutes. Stir in butter and vanilla. Microwave on high for 2 minutes. Add baking soda and stir until smooth and a medium brown color.

Immediately pour onto a lightly greased baking sheet. When cool, break into small pieces. Store in an air tight container.

NOTE: Work fast after last cooking time, candy sets up quickly.

Since microwave ovens vary in power, you may need to adjust your cooking time.
