ASIAN BEEF AND NOODLES 
1 1/4 lbs. ground beef
2 (3 oz.) pkg. Oriental flavored instant ramen noodles
2 c. frozen vegetable mixture
1/4 tsp. ground ginger
2 tbsp. thinly sliced green onion

In a large nonstick skillet, brown beef over medium heat until it is no longer pink, breaking up into 3/4-inch pieces. Pour off fat and season beef with one seasoning packet from the noodles and set aside. In same skillet, combine 2 c. water, vegetables, noodles (broken up), ginger and remaining seasoning packet. Bring to a boil and reduce heat. Cover and simmer for 3 minutes or until noodles are tender, stirring occasionally. Return beef to skillet and stir in green onions.

Makes four servings.
