3/4 sm. jar pine nuts 1 pkg. frozen spinach leaf or chopped 2 tbsp. red onion 3 tbsp. butter plus 3 tbsp. melted (keep separate) Frozen phyllo dough, thawed Locatelli Romano, grated Preheat oven to 350 degrees. Finely chop red onion. Saute lightly, do not brown onion. Cook spinach, drain well. In bowl, mix prepared spinach, pine nuts, onion with butter. Grease cupcake pan. Cut phyllo dough (will break, don't fret) into large squares. Fit into cupcake pan. Brush with melted butter. Sprinkle with melted butter. Sprinkle with locatelli cheese. Place spinach into each. Sprinkle locatelli again, until spinach. Fold phyllo corners. Bake until dough is golden brown. Excellent with game. |
