SWISS STEAK 
2 lb. eye of round
1/2 c. flour
2 tsp. salt
2 tsp. paprika
2 onions, sliced
1 lg. can tomatoes
1 can tomato sauce
2 to 3 c. water
1/2 tsp. pepper
1/2 c. shortening

Cut meat into slices about 3/8 inch thick. Dip into flour seasoned with salt and paprika. Saute onions until yellow. Remove onions with slotted spoon, leave fat in pan. Brown meat slices, remove from pan.

Put remaining seasoned flour into pan; stir. When flour and fat are mixed thoroughly, add boiling water. Stir until gravy is made. Add tomatoes and tomato sauce, if too thick, add more water. Bring to boil. Strain, pour over meat and onions that have been put into casserole dish.

Bake tightly covered in 325 degree oven until meat is tender, approximately 2 hours. Serve over fluffy rice. Yield: 8 servings.

This sounded harder to make than it was. It turned out delicious. The meat was tender and the gravy sauce was excellent.
