SPICY DEER SWISS STEAK 
2 lb. deer round or chuck steak (cut at least 1/2 inch thick)
1/2 c. flour (seasoned with 1 tsp. salt and pepper)
3 tbsp. bacon grease
1 can stewed tomatoes (14 1/2 oz.)
1 can diced Ro-Tel (10 oz.)
1 tbsp. Worcestershire sauce
1 pack brown gravy mix

Cut steak into serving portions, pound on both sides with a meat mallet. Dredge meat in seasoned flour. Melt bacon grease in 12 inch iron skillet. Brown meat on both sides over low-medium heat. Remove meat, set aside.

Stir in stewed tomatoes, diced Ro-Tel, brown gravy mix and Worcestershire sauce. Break or cut up any large tomatoes. Stirring constantly, cook over medium heat until gravy mix is completely dissolved and the mixture thickens slightly. Remove from heat. Add meat, spooning sauce over it. Cover with aluminum foil or oven proof lid. Bake in a preheated 350 degree oven for 1 hour or until meat is tender.

This recipe is amazing!!!! I am new to eating venison so I was looking for some recipes. This is so easy and delicious. I soaked the steaks in milk while they were thawing - I'm not sure if that made a difference or not. I left the meat in the milk until about an hour before I was ready to make dinner, then I drained the milk and rinsed the meat. I followed the recipe to the T except that I cooked it about 1 hour and 45 minutes, while I was making homemade mashed potatoes. The meat was cut with a fork tender and the gravy had a little kick from the Ro-Tel and went very nicely over the mashed potatoes. YUM!! My husband loved it and so did my kids. Thanks for the great recipe!

Made this for the first time last night for friends. What a hit. Everyone loved it. Meat was so tender. The only thing I did different was I had a jar of brown gravy with onions so I used it instead of pack of brown gravy mix, and I drained the tomatoes. Will be making this recipe a lot.
