TURKEY MEATLOAF 
1 (10 oz.) pkg. frozen, chopped spinach
5 slices firm white bread
1 onion
1 tbsp. oil
2 eggs
1/2 c. milk
1 1/2 tsp. parsley
2 tsp. salt
1 tsp. pepper
2 lbs. ground turkey
2 tsp. lemon juice
1/2 c. ketchup
2 tbsp. butter

Thaw spinach and drain well. Heat oven to 350 degrees. Butter large baking pan. Process bread into fine crumbs. Chop onion into small pieces and cook in oil until soft. Whisk eggs with milk, parsley, salt, pepper, and lemon juice; mix well. Form into a 9 x 5 inch loaf. Brush with ketchup and bake 30 minutes. Baste with melted butter and bake, basting occasionally, until well browned, an additional 30 to 35 minutes. 8 servings.
