“BELLE'S NO-BAKE CHOCOLATE OATMEAL COOKIES” IS IN:

BELLE'S NO-BAKE CHOCOLATE
OATMEAL COOKIES
 
2 cups sugar
1/2 cup evaporated milk (Carnation)
1/2 cup (1 stick) butter
pinch of salt
1 tbsp. white corn syrup (Karo)
3 tbsp. cocoa
1/2 cup crunchy peanut butter (your favorite)
3 cups quick-cooking oats
1 tsp. vanilla
chopped nuts (optional)

In a medium saucepan, combine sugar, evaporated milk, butter, salt, syrup and cocoa. Bring to a boil and stir constantly until mixture reaches the soft ball stage (234-238°F on a candy thermometer).

Add peanut butter and stir until it melts. Add oatmeal, vanilla and nuts (if desired). Mix until begins to thicken.

Drop by spoonful onto waxed paper.

Cooks Note: Use of a candy thermometer is recommended.

This is the real thing - the recipe I was looking for. Perfect every time. Wonderful texture. Sugar can be decreased by 1/2 cup for a little less sweetness, and still this recipe comes out with the perfect texture.

Remember very similar recipe from grandmother who prepared with molasses instead of cane syrup & these were incredibly full of flavor. Just a thanks to Belle for reminder *

This became my mother's favorite cookie recipe; no rolling, no baking, no decorating. It looks very much like what I remember. It looks a little fancier. I think she made these cookies with 6 ingredients. Definitely, NO peanut butter.
Anyway, my mom made them on the drier side. They would be lumpy and fun to gnaw & nibble. With too much butter (or syrup), they ooze too much to be enjoyable.
