CHOCOLATE OATMEAL NO BAKE
COOKIES
 
1 stick butter
2 cups sugar
1/3 cup peanut butter (smooth or crunchy)
3 cups oats
1/3 cup cocoa
1/2 cup milk
1 tsp. vanilla

In heavy saucepan stir butter, sugar, cocoa and milk. Bring to a boil and boil for 1 minute stirring occasionally. Remove from heat and add peanut butter and vanilla. Stir in oats. Drop by teaspoonful onto wax paper.

Hi Ada,

The peanut butter provides shortening (like butter) to make the cookies soft. You can try using a different kind of nut butter, such as cashew butter, or try substituting just butter for the peanut butter (to total 1 cup) but the cookies will not have the same flavor or texture. A banana could be added along with the butter for flavor; you would most likely need to adjust the milk downward or omit, or else add more oatmeal. Unless you're prepared to experiment with consistency, it would be simpler to choose a recipe that doesn't call for peanut butter!
