TERRIFIC TACOS 
12 taco shells or tortillas (try soft tortillas made from corn or whole wheat)
1 (16 oz.) can fat-free refried beans
2 tomatoes, chopped
2 c. shredded romaine or iceberg lettuce
4 oz. low-fat Cheddar cheese, shredded
nonfat sour cream
salsa

Preheat oven to 350°F. If using taco shells, place on baking sheet and bake for 6 minutes. If using tortillas, warm slightly.

Heat beans in microwave or on stove top. In a medium bowl, combine tomatoes and lettuce. Fill taco shells or tortillas first with beans, then top with tomato-lettuce mixture, cheese, sour cream and salsa.

Makes 12 low-fat tacos.

Since microwave ovens vary in power, you may need to adjust your cooking time.
