APRIL'S HOMEMADE FETTUCCINE

1 (16 oz.) box fettuccine pasta (Barilla)
1/2 cup (1 stick) butter
1 1/2 cups freshly grated Parmesan cheese
1 1/4 cups cream
3 tbsp. chopped fresh parsley
salt and pepper, to taste
shrimp (optional)

Add pasta to a large pan of boiling water and cook until tender. Drain in a colander and return to pan.

While the pasta is cooking, heat butter in a medium saucepan over low heat. Add Parmesan cheese and cream - bring to a boil, stirring regularly.

Add parsley. Season with salt and pepper to taste. Stir to combine.

If desired, add shrimp to the sauce and let cook until the shrimp is cooked.

Add sauce to the pasta. Toss well and serve immediately.

Serves 4 to 6.
