YELLOW CAKE AND CARAMEL ICING 
2 1/2 c. sifted flour
1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1/2 c. soft shortening
3/4 c. milk
1 1/2 tsp. vanilla
2 eggs, unbeaten
1/4 c. milk

Preheat oven to 350 degrees. Grease and line pans with wax paper. Sift into large bowl, flour, sugar, baking powder and salt. Add shortening; pour in milk and vanilla. Beat 1/2 minute on low speed, then 2 minutes on medium speed. Add eggs and the 1/4 cup milk, beat 1 1/2 minutes. Divide batter into 2 pans. Bake 25-30 minutes. Cool.

ICING:

1 box light brown sugar
1 c. Carnation milk
1 stick butter
1 tsp. vanilla

Cook sugar, butter, milk until it forms a soft ball. Remove from heat and let cool. Add vanilla and beat until spreading consistency. If too thin, add confectioners' sugar.
