R.'S CHRISTMAS BRUNCH EGGS | |
10 eggs 1 pt. cottage cheese 1 tsp. baking powder 1 tsp. salt 10 drops Tabasco 1/2 c. flour 1 lb. Monterey Jack cheese, shredded 1 (7 oz.) can diced green chilies 1/2 c. butter, melted Preheat oven to 400 degrees. Butter a 9 x 13 inch glass dish. In blender, whirl eggs, cottage cheese, baking powder, salt, Tabasco, and flour. Pour into a large bowl. Add cheese, chilies, and butter; mix well. Pour into baking dish. Bake 15 minutes at 400 degrees. Reduce heat to 350 degrees and bake 25 to 30 minutes more. Keeps 3 to 4 days refrigerated. Serve warm or cold. |
