ZUCCHINI-CHEDDAR BREAD 
3 c. Bisquick
1 tsp. baking powder
1/2 c. Cheddar or Parmesan cheese
salt and pepper to taste
2 tbsp. chopped parsley
1 small onion, chopped
1 clove garlic, chopped
1/2 c. oil
4 eggs, beaten
2 medium zucchini, grated

Place all dry ingredients in bowl and stir. Then add parsley, onion and garlic; stir again. Next, add oil to the beaten eggs. Add to dry mix and stir well to moisten all ingredients. Then add zucchini; mix and spread out in oiled 9 x 12 x 2 pan.

Bake at 350°F for 40 to 45 minutes.

Tip: Sauté onion in 1 tablespoon oil if desired.
