ESCAROLE & TOMATO MEDLEY 
1 garlic clove, minced
2 c. chopped escarole
1 med. tomato, peeled, seeded & chopped
Dash each of salt & pepper

Heat medium saucepan sprayed with Pam. Add garlic and saute, being carefully not to brown. Add escarole, tomato, salt and pepper. Cover and simmer approximately 15 minutes or until escarole is just tender. (Measure servings.) Single serving = 1 cup vegetable.
