TANFARA SEAFOOD MEDLEY | |
1 lb. shrimp (cooked recommended) 1 lb. calamari or calamari rings 1 lb. scallops (if desired) 1 lb. crab meat or imitation crab 1 green pepper 1 onion (yellow, Spanish or red) 1 garlic clove 1/2 cup water 1 (8 oz.) can tomato paste 1 (15 oz.) can mixed vegetables, drained 1 (4 oz.) can sliced mushrooms, drained (if desired) 1/4 cup olive oil (extra virgin if you like) seasoning, to taste (Old Bay, Adobo, Sazon, etc.) or salt and pepper, to taste Add 1/4 cup of olive oil in a nice size soup pot (non-stick pot). Preheat pot to medium/high. Dice up green pepper, onion and garlic clove. Add to pot. Stir for two minutes. Add a little seasoning. Stir for another two minutes. Add shrimp, calamari, scallops. Stir and let simmer for 6 minutes. Stir again. Add 1/2 cup of water and stir one minute. Add tomato paste. Stir until paste has blended evenly. Add can of mixed vegetables and can of sliced mushrooms (if desired). Stir for a minute. Add crab meat or imitation crab. Stir for one minute or until all contents are blended evenly. Add more seasoning, to taste. Let simmer on low for 25 minutes. Serve while hot or let stand for 15 minutes. Enjoy! Serves 4 to 6. Submitted by: Victor Sobrado Tanfara of Effort PA |
