CHICKEN MONTEREY 
4 to 6 boneless chicken breasts
1 sm. bottle Catalina dressing
1 sm. can pineapples
6 bacon slices, cooked
1/2 stick butter

Marinade chicken overnight in dressing. In a skillet melt butter until hot. Add pineapple juice. Simmer until it starts to thicken (2 to 3 minutes). Add pineapples. Simmer another minute or two until pineapples begin to brown. Add chicken and dressing mixture. Place pineapples on top of chicken. Simmer for 20 minutes on medium heat turning once. Top with bacon and Swiss cheese. Microwave to melt cheese.

Since microwave ovens vary in power, you may need to adjust your cooking time.
