CHICKEN PARMESAN 
4 chicken breasts, halved (boneless)
1 beaten egg
Salt and pepper
3/4 c. bread or cracker crumbs
3 tbsp. Parmesan cheese
Olive oil
1 c. tomato sauce
Mozzarella cheese

Pound breasts very thin between waxed paper. Dip in beaten egg seasoned with salt and pepper. Then dip in bread/cracker crumbs mixed with 3 tbsp. Parmesan cheese. Saute in hot olive oil until golden.

Place in shallow baking dish in one layer. Pour tomato sauce over breasts. Top with thin slices Mozzarella cheese and sprinkle with Parmesan cheese. Bake 20 to 30 minutes at 350 degrees or until cheese melts and browns slightly. Serves 8.
