CHEESY CHICKEN (MICROWAVE) 
1/4 c. butter
3/4 c. Ritz or saltine cracker crumbs
1/3 c. grated Parmesan cheese
2 tbsp. chopped chives
2 tbsp. chopped parsley
3 lbs. cut up chicken breasts (can be skinless)

Place butter in an 8 inch (round or square) glass baking dish. Cook on ROAST for 1 1/2 minutes or until butter is melted. Combine cracker crumbs, cheese, chives, and parsley in a shallow dish. Dip pieces of chicken in butter and roll in cracker mixture.

Place chicken pieces in glass baking dish, skin side up, with thickest pieces toward outside of dish. Cook, covered, on HIGH for 15 to 17 minutes or until chicken is tender. Let stand, covered, for about 5 minutes before serving. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
