SCALLOPED CORN (German Style) 
1 c. chopped onions
1/4 c. sugar
6 slices thick bacon (cut into 1 inch strips)
1/2 tsp. salt
4 c. kernel corn (fresh or frozen)
1 1/4 c. milk
12 unsalted crackers (crushed)
2 tbsp. melted butter

Step 1: Preheat oven to 350.

Step 2: Cook bacon over low heat until begins to brown. Don't over cook, remove, and drain on paper towels.

Step 3: Add onions to skillet and saute until golden brown, about 5 minutes. Then add corn, milk, sugar and salt; stir.

Step 4: Spoon 1/2 corn mixture into lightly buttered 2 quart pan sprinkled with 1/2 the cracker crumbs and drizzle 1/2 the butter. Spoon remaining corn mixture in an even layer over crackers and drizzle remaining butter. Top with bacon pieces.

Step 5: Bake 35-40 minutes until top is golden brown and moisture has been absorbed. Serve with baked ham or roast beef and a green vegetable.
