LIZ'S PORK CHOP CASSEROLE 
4 (1/2 inch) center-cut pork chops
1/2 c. rice, uncooked
1/2 c. bell pepper, sliced
1/2 c. onion, sliced
2 med. tomatoes, sliced
Salt & pepper to taste
Pinch of oregano
1 1/4 c. fat-free bouillon

Brown pork chops lightly under the broiler. Place rice in bottom of 2-quart casserole. Place pork chops on the bed of rice and add the bell pepper, onion, tomato, seasonings and bouillon. Cover casserole dish and bake at 350 degrees for 1 hour. An easy favorite!
