MIXED VEGETABLE CASSEROLE 
2 boxes frozen mixed vegetables
1 c. chopped onion
1 c. chopped celery
1 c. mayonnaise (I use fat-free)
1 c. shredded cheddar cheese
2 c. crushed Ritz crackers
1/2 c. melted butter

Cook vegetables; drain. Add mayonnaise and 1/2 cup of cheese. Put mixture in casserole dish. Mix crackers, melted butter and remaining 1/2 cup of cheese. Sprinkle over vegetable mixture. Bake uncovered until well done, about 350 degrees for 20-30 minutes.
