BEEF BRISKET BAR-B-Q | |
4 to 5 lb. boneless beef brisket, well trimmed 1 1/2 tsp. salt 1/2 c. catsup 1/4 c. vinegar 1/2 c. finely chopped onions 1 tsp. Worcestershire sauce 1/2 c. brown sugar 1/4 c. sugar 1 tsp. allspice 1/2 tsp. Liquid Smoke 1 bay leaf, crumbled 1/4 tsp. pepper Rub brisket with salt. Place in an ungreased 13 1/2 x 9 x 2 inch baking dish. Cover tightly. Cook brisket at 325 degrees for 3 hours or until tender! Stir together remaining ingredients in a saucepan. Cook 1 hour or so over low heat. To carve brisket, slice thin diagonal slices across the grain at a slanting angle from 2 or 3 faces of brisket. Serve on hamburg roll with hot Bar-B-Q sauce. A favorite in Texas! |
