MEXICAN CHEESE COOKIES | |
1/2 c. sugar 1/3 c. butter, softened 1 c. Monterey Jack cheese, shredded (4 oz.) 1 c. all-purpose flour 1 tsp. baking powder 1/4 tsp. salt 1 egg, beaten Heat oven to 375 degrees. Mix sugar and butter; stir in cheese. Stir in remaining ingredients, except egg. Roll dough by teaspoonfuls into sticks, about 3 1/2 x 1/2-inch. Place on lightly greased cookie sheet. Press sticks lightly to flatten. Brush with egg. Bake until light brown around edges, 8 to 10 minutes. Immediately remove from cookie sheet. Cool on wire racks. Makes 24 cookies. |
