SAUERKRAUT BALLS 
4 tbsp. butter
1 med. chopped onion
1 1/3 c. chopped ham
1/2 clove garlic, minced
1/2 c. chicken broth
4 tbsp. flour
3 c. sauerkraut, drained
1 tbsp. chopped parsley
1 egg
1 c. milk
Cracker meal

Melt butter in pan and brown onion slightly. Add ham and garlic; brown. Stir in flour and cook thoroughly. Add broth, sauerkraut and parsley; cook a few minutes more. This should form a thick paste. When cool, roll into 1 inch balls.

Beat together egg and milk. Dip balls into flour then egg mixture and roll in cracker meal. Fry in deep fat, brown and drain. Makes about 50.
