SUMMER SAUSAGE 
5 lbs. ground round
5 tsp. Morton Tender Quick Salt
4 tsp. whole mustard seeds
3 tsp. coarse pepper
2 tsp. garlic salt
2 tsp. hickory salt or smoked salt
Salt can be cut down if desired
1 c. water

Mix all spices with water, add meat and mix well. Cover and refrigerate for 24 hours. Mix 3 times during this period. Form into 2 long rolls. Bake in broiler pan for 8 hours at 200 degrees. Turn over after 4 hours. Cool and refrigerate. May be frozen. Slice thin and eat with crackers.
