FRANCES'S SUMMER SAUSAGE | |
4 lbs. lean ground beef 2 tbsp. liquid smoke 1 1/2 tsp. ground pepper 1/4 c. curing salt 1 1/2 tsp. garlic powder Mix together and chill for 24 hours. Divide into 4 loaves. Wrap each in nylon net or cheesecloth. Place on rack over large shallow pan. Cook at 225 degrees in oven for 4 hours. Remove from oven. Pat with paper towels. Remove net. Cool, then wrap in foil and refrigerate or freeze. Makes about 3 pounds. |
