MISSISSIPPI APPLE CAKE 
2 c. sugar
2 eggs
1 tbsp. cinnamon
1 c. buttermilk
1 stick butter
1 1/4 tsp. baking soda
2 1/2 c. flour
3 raw apples, chopped

Cream sugar and butter. Add eggs and beat well. Sift soda and cinnamon with flour. Add flour and milk to creamed mixture. Add apples last by folding into mixture. Bake in a greased tube pan at 325 degrees for 50 to 60 minutes.

TOPPING:

1/2 c. cream
1/2 tsp. vanilla extract
1 c. grated coconut
3 tbsp. butter
2/3 c. light brown sugar
1/2 c. chopped pecans

Cream sugar and butter. Add cream, vanilla, coconut and pecans. Spread over cake. Return to oven until sugar has melted.
