MOZZARELLA CHICKEN 
4 boneless chicken breasts, split (8 halves)
1 egg, beaten
1/2 c. flour
2 tbsp. Parmesan cheese
Salt and pepper to taste
2 tbsp. oil
4 tbsp. butter
3/4 lb. sliced mushrooms
2 tbsp. butter
8 slices cooked ham (thin)
8 slices Mozzarella

Mix flour, Parmesan, salt and pepper. Dip chicken in egg; roll in flour mixture. Cook in oil and butter about 2 minutes until golden brown. Arrange chicken in 9x13 baking dish. Saute mushrooms in 2 tablespoons butter. Cover chicken with ham, sauteed mushrooms and cheese. Bake 35-40 minutes at 350 degrees.
