MOZZARELLA CHICKEN 
4 boneless skinless chicken breasts
4 slices Provolone or Mozzarella cheese
Garlic powder
1 tsp. butter
2 c. tomato sauce (preferably homemade with basil and oregano added)

Brown chicken breasts in butter or non-stick spray in corning ware. Sprinkle garlic powder over breasts.

Grind whole tomatoes in blender, adding Italian spices. Pour over breasts.

Layer cheese over each breast, cover and bake 1 hour or less. May remove lid at end to thicken sauce.

Excellent leftover - cut up chicken and cheese and use over bulgar or brown rice.
