PUDDING (FLAN) 
1/3 c. white granulated sugar
8 egg yolks & 1 egg white
1 can condensed milk
1 tsp. vanilla essence

Preheat oven to 350 degrees (325 degrees if using glass or ceramic pan). Spread sugar in a non-stick pan. Heat until melted and sugar becomes brown. Pour caramelized sugar into baking pan or mold. Line bottom of pan evenly. Cool.

In a bowl, beat eggs lightly. Add milk and vanilla. Pour mix into baking pan. Bake 40-50 minutes or until fork stuck in center of flan comes out clean. Cool and refrigerate.
