CHEESE FLAN 
8 oz. pkg. cream cheese (room temperature)
5 eggs
1 can sweetened condensed milk
1 can evaporated milk
1 tsp. vanilla
1 c. sugar

Caramelize sugar; coat oven-proof pan or mold (bottom and sides). Allow to cool. Beat cream cheese until smooth. Add sweetened condensed milk, equal amount of water. Add the eggs and evaporated milk and vanilla. Pour into prepared pan. Place pan in larger pan with 1 inch of water in it (double boiler effect). Bake 1 hour at 350 degrees until toothpick comes out clean. Flan won't be solid until refrigerated. Run a knife around edges, invert on serving plate with edge on it so syrup won't run off the plate. Serve cold.
