MAKE-AHEAD PIE CRUST 
4 cups all-purpose flour
2 cups butter flavored or regular Crisco
1 tablespoon vinegar or lemon juice plus ice water*
2 teaspoons salt (optional)

Add vinegar or lemon juice to enough ice water to measure one cup total.

Mix flour and salt (if using) and cut in shortening using a pastry blender (or use food processor for 15-20 seconds). Add enough ice water until it holds together. Make 4 disks; wrap well.

Refrigerate overnight or use right away (after a 5 minute rest). Or wrap well and freeze in Ziploc bag.

Variation: Substitute 1 cup shortening with butter or lard.
