LEMON POTATO WEDGES 
2 tbsp. butter
2 tbsp. lemon juice
3 tbsp. grated Parmesan cheese
1 1/2 tsp. grated lemon rind
1/2 tsp. paprika
1/8 tsp. salt
3 med. baking potatoes

Place butter in a 1 cup glass measure. Microwave 45 seconds. Add lemon juice; set aside. Combine cheese and next 3 ingredients. Cut potatoes lengthwise into quarters. Brush with butter mixture and sprinkle with cheese mixture. Arrange like spokes of a wheel on a 12" microwave pizza plate; cover loosely with wax paper. Microwave at High 11 to 12 minutes until potatoes are tender, rotating dish after 5 minutes. Arrange on plate and garnish with parsley. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
