APPLE PIE 
6 c. sliced, peeled tart apples
2/3 c. sugar
1/4 c. brown sugar
1/2 c. orange juice
1/4 tsp. nutmeg
1/4 tsp. cinnamon
2 tbsp. butter
Pastry for 2 crust pie

Combine apples, sugars and orange juice in large pan, add enough water to just cover the apples. Cook apples until tender. Remove apples from liquid and set aside. Boil liquid until thick, stirring constantly.

Line pie pan with pastry, brush with egg white to seal. Arrange apples in pastry. Pour syrup over top and sprinkle with nutmeg and cinnamon. Dot with butter. Cover with top crust. Brush crust with egg white and sprinkle lightly with sugar if desired. Bake in preheated oven at 425 degrees for 40 minutes or until golden brown.
