MINCEMEAT CAKE 
1 (28 oz.) jar mincemeat
1 (15 oz.) box raisins (may sub. some rinsed candied peel for some of raisins)
2 c. chopped pecans
1 tbsp. vanilla
1 1/2 c. butter, melted
3 c. sugar
3 eggs, separated
1 1/2 tsp. baking soda dissolved in 1/4 c. water
2 c. flour, all-purpose

Combine mincemeat, raisins, pecans and vanilla. Set aside. Combine butter, sugar and egg yolks. Beat well. Add soda mixture. Beat egg whites until stiff. Combine mincemeat and butter mixture. Add flour slowly and fold in egg whites.

Line bottom 10 inch tube pan with heavy brown paper. Grease paper and sides of pan. Bake at 275 degrees for 2 hours and 10 minutes, or tests done. Cool slightly, remove from pan, remove paper. Cool thoroughly, wrap in aluminum foil. Store in cool place for several weeks. May be frozen.
