MARY'S MINCEMEAT CAKE | |
2 1/2 to 3 c. flour 1 c. sugar 1 tsp. salt 2 eggs 1 box mincemeat 1/2 c. chopped pecans 1 tsp. vanilla 3 tbsp. cocoa 1 tsp. cinnamon 1/2 c. Crisco shortening or butter 1 c. pear preserves 1 c. buttermilk 1 tsp. baking soda In a saucepan, put Crisco and mincemeat, breaking mincemeat in small pieces. Let set on a low heat until Crisco or butter melts. Set aside. In a large bowl, mix flour, sugar, soda, cinnamon, cocoa and salt together. Mix well. Add eggs, buttermilk, preserves, mincemeat and shortening or butter. Mix thoroughly. Add pecans. Bake in 2 (9 inch) cake pans (greased and floured) at 350 degrees for about 45 minute or until done. Ice with powdered sugar icing. |
