MINCEMEAT & APPLE COOKIE BARS 
3/4 c. sugar
1/4 c. shortening
2 eggs, unbeaten
1 c. S&W mincemeat
1/2 c. applesauce
1/2 c. walnuts, chopped
1 3/4 c. sifted flour
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. baking soda

Cream sugar and shortening, add eggs and beat well. Stir in mincemeat, applesauce and nuts. Sift flour, salt, cinnamon and soda together. Blend into creamed mixture. Turn into greased 15 x 10 1/2 inch jelly roll pan or 2 - 9 x 9 x 2 inch pans. Bake at 350 degrees for 20-25 minutes. While warm, frost with chocolate or orange frosting.

ORANGE FROSTING:

Blend: 1 orange rind, grated 1 c. coconut, shredded 3 or 4 tbsp. orange juice

Cut into 1 x 3 inch bars.
