TOMATOES ROCKEFELLER 
4 or 5 lg. tomatoes
2 pkgs. frozen spinach
2 tbsp. garlic
1 sm. onion
Red or yellow pepper (optional for looks only)
1 c. Parmesan cheese
Olive oil (enough to cover bottom of pan)
1 lg. pkg. Provolone cheese

In frying pan place olive oil, garlic, onion (sliced fine) and thawed spinach, toss quickly to mix all ingredients. After about 10 minutes, sprinkle about a good fist full of cheese on top of spinach mixture. On a cookie sheet place thick sliced tomatoes in a row, top each with a good dab of spinach mixture (cover the whole tomato) then place a triangle shaped piece of cheese on top. Place in oven for about 5 minutes at 350 degrees, then turn broiler on to brown cheese a little.
