SNOWBOUND VANILLA PUDDING 
1/3 cup sugar
1/4 cup cornstarch
1/4 tsp. salt
2 3/4 cups milk
2 tablespoons butter
1 tsp. vanilla or 1 tbsp. rum

If you can't get out of the house, this pudding can be made with ingredients that are usually in the pantry! If you don't have milk, you can substitute reconstituted non-fat dry milk powder; add an extra teaspoon of cream or butter if using powdered milk.

In a saucepan, combine sugar, cornstarch and salt. Gradually pour in milk. Bring mixture to a boil, stirring constantly over medium-low heat (or in the top of a double boiler). Allow mixture to boil for one minute before removing from heat.

Add butter and stir in vanilla.

Tip: Milk burns easily, so use either a heavy bottom pan or a double boiler. For a richer pudding, lightly beat the yolk of 1 egg and then beat it into the milk before heating. For a variation, add 2 tablespoons of Minute Tapioca and cook for 3 minutes.
