SUMMER SQUASH CASSEROLE 
1 lb. lean ground beef
1 med. onion, sliced
1/2 bell pepper, chopped
5 - 6 med. summer squash, sliced
salt & pepper to taste

Add squash to boiling water and cook until tender. Drain and set aside. In a large fry pan with a little oil, add onion and chopped peppers. Cook until slightly browned. Add ground beef to fry pan and break up into small pieces. Cook until brown. Drain any excess fat. Turn heat on high for a few minutes, add squash to beef mixture. Mix well and reduce heat to medium-low. Add salt & pepper to taste. Cook approximately 10 - 15 minutes.
