YELLOW SUMMER SQUASH CASSEROLE 
3 yellow summer squash
1 bell pepper
1 onion
2 eggs, beaten
1/3 c. mayonnaise
salt and pepper
1/2 to 3/4 c. grated cheese
1 (4 oz.) can green chilies
1 tbsp. butter

Cut into bite size pieces the squash, pepper and onion. Steam. Stir in eggs, mayonnaise and salt and pepper.

Mix together and pour over the squash the cheese, chilies and butter. Put into a greased casserole dish and bake at 400°F for 15 to 20 minutes or until bubbly.
