SPANISH NOODLES | |
2 slices bacon 1 lb. ground beef 1 green pepper, diced 1 onion, diced 2 cups uncooked noodles 1 can tomatoes or (about 3 cups) fresh, chopped 1 large onion, chopped 4 cloves garlic, minced 1 tbsp. fresh basil, minced (optional) 1/4 tsp. dry oregano 1/2 cup chili sauce or medium taco sauce 1 tsp. paprika pinch of red hot pepper 1 tsp. sea salt (more or less to taste) 1/4 tsp. pepper Dice the bacon and sauté in skillet until crispy. Add ground beef and brown well with onion (drain if there is excess grease). Add remaining ingredients in layers, being sure that noodles remain moistened. Cover and cook over medium-high heat until steam escapes. Reduce heat to simmer and cook on low for 30 minutes. Serves 4. Submitted by: Belle |
