JOHNSON'S TEMPTATION | |
1 c. sliced onions 1/3 c. butter 1 c. cream 4 c. raw potatoes, cut into thin strips 1 can Swedish anchovies (about 18 fillets) Saute sliced onions in 2 tablespoons of butter. Peel potatoes and cut into very thin strips. Butter a 1 1/2 quart baking dish. Arrange one layer of half the amount of potatoes. Spread onions and anchovy fillets over and top with remaining potatoes and dot with remaining butter. Add cream and cover with aluminum foil. Bake in hot oven (400 degrees) for 30 minutes. Remove aluminum foil and bake 20-30 minutes or until potatoes are tender and golden brown. Serves 4. |
