CARROT CASSEROLE 
2 #2 cans drained cooked carrots
2 cans cream of mushroom soup
2 c. grated Cheddar cheese
1/2 c. chopped onion
Salt
Pepper

Mix all ingredient and place in appropriate casserole. Top with cracker crumbs and dot with butter. Bake at 350 degrees for 45 to 60 minutes.
