WHOLE WHEAT BREAD 
1 pkg. yeast
1/2 c. mashed potatoes
2 c. warm water
2 tbsp. honey
2 tsp. salt
Scant 3 c. bread flour
1/2 c. honey or water
1/2 c. molasses or brown sugar
3 tbsp. melted shortening or butter
3 c. whole wheat flour
1 c. wheat germ (optional)

Dissolve yeast in warm water. Add potato, honey, salt and bread flour. Allow to sit at least 1 hour to create sponge.

Combine honey, molasses and butter/shortening and add to sponge. Add whole wheat flour and wheat germ if desired. Knead until smooth, adding flour as needed. Let rise until double in bulk. Punch down and make into 2 large or 3 small loaves. Let rise. Bake 30-40 minutes at 375 degrees.
