WHOLE WHEAT BREAD
1 tbsp. honey
2 tbsp. yeast (3 pkg.)
1/4 c. warm water (105-115 deg.)
1/2 c. vegetable oil
1/4 c. unsulphured molasses
2 3/4 c. warm water
3 eggs
8 c. flour (3/4 whole wheat & 1/4 white bread flour)

Place honey, yeast and warm water in a bowl. Let it set for 5 minutes to dissolve. Add vegetable oil, molasses, water, eggs and 4 cups of flour. Blend well with wooden spoon. Mix in more flour, adding only enough to make a stiff dough.

Turn dough out onto a lightly floured board. Knead until smooth and elastic, about 7 minutes. Place in a greased bowl and turn to oil all sides. Cover with a cloth and let rise until doubled in size. Punch dough down and divide into thirds and shape into loaves. Bake at 375 degrees for 40 minutes. Remove from pans and let cool on racks.

Before shaping into loaves you can add up to 1 cup of the following: chopped nuts, sunflower seeds, sesame seeds or wheat germ. Yields 3 loaves.

Additional Info: Always use lukewarm water, eggs room temperature; let rise in warm temperature, covered well. Let bread rise double in size in loaf pans before baking.
